Ingredients

  • 5 slices of swift double smoked thick cut bacon

  • 660g of terrific trio creamer potatoes (the little potato company)

Instructions

  1. Preheat oven to 425 degrees fahrenheit. Cook bacon for 15 minutes or until crisp

  2. Place bacon between two paper towels and let sit to keep crisp. Pour bacon grease off backing sheet into a glass cup for later

  3. Boil a pot of water and cook potatoes for 15 minutes

  4. Strain potatoes under cold water and let sit for 5 minutes

  5. Take a cup and lightly smash potatoes. Repeat until all potatoes are smashed

  6. Place bacon on baking sheet. Brush bacon fat on potatoes. Season with salt, pepper, and thyme and pop in the oven. Broil for 20 minutes or until crisp

  7. Let cool and serve
